SAUTEED ZUCCHINI GARDEN 
2 tbsp. olive oil
1 clove garlic, finely chopped
1 med. onion, sliced
2 med. zucchini, thinly sliced
1/2 c. diced fresh tomato
1/4 tsp. dried oregano, rubbed
Salt and freshly ground pepper, to taste
Parmesan cheese, if desired

Heat olive oil in a medium skillet. Saute garlic and onion for 1 minute. Add zucchini is still firm, add tomatoes and oregano. Cover and cook 5 minutes longer until zucchini is just tender. Season to taste with salt and pepper. Serve sprinkled with Parmesan cheese. Serves 4.
