GARDEN ZUCCHINI FRITTERS | |
1/3 c. packaged Bisquick mix 1/4 c. grated Parmesan cheese 1/8 tsp. pepper 2 slightly beaten eggs 2 c. shredded unpeeled zucchini (2 med.) 2 tbsp. butter In bowl, mix together biscuit mix, cheese and pepper. Stir in eggs and zucchini. In large skillet or griddle melt butter. Use 2 tablespoons mixture for each fritter. Cook until brown 4-5 minutes on each side. Serve warm and enjoy! |
