GARDEN FRESH ZUCCHINI 
1 sm. onion, diced
2 tbsp. fresh parsley, chopped
3 tbsp. olive or other vegetable oil
1 green pepper, chopped

1 lb. zucchini, cubed
2 tomatoes, diced
1/2 tsp. salt
1/4 tsp. pepper

Cook first set of ingredients in large skillet over medium high heat just until onions are tender (not brown). Reduce heat to medium and add remaining ingredients. Continue cooking for about 20 minutes, stirring frequently, until zucchini is tender.
