STUFFED CRABS 
3 tbsp. cooking oil
1 lb. unseasoned boiled crab meat
4 lg. onions
1 lg. bell pepper
4 stems celery
1/2 clove garlic
Cayenne pepper & salt to taste
1 long loaf stale poor-boy bread
1 box bread crumbs

Mince all greens. Soak bread in water until soft. Drain bread thoroughly. Add bread and all greens to crab meat. Add pepper and salt to taste.

Put mixture in large pot with 3 tablespoons cooking oil. Cook on medium fire for 60 minutes, stir constantly. About 5 minutes before cooking time is complete, add garlic. When finished, put stuffing in cool place. Let cool about 20 minutes.

Stuff crab shells with the ingredients. Sprinkle tops of crabs with bread crumbs. Can be frozen. When ready to serve, place crabs in oven at 350 degrees for 15 minutes. Makes 18 stuffed crabs.
