PAT'S TEX-MEX MEAT LOAF 
1 med. onion, chopped
1 1/2 lbs. ground turkey
1/2-1 lb. 95% lean ground beef
1 c. soft bread crumbs
10-12 black olives, chopped
1 (15 oz.) can tomatoes, sliced and drained
1 (4 oz.) can green chilies, chopped
1 egg white, slightly beaten
2 cloves of garlic, minced or 1/2 tsp. dry minced garlic
8 oz. low fat grated Cheddar cheese, halved

1. Preheat oven to 375 degrees.

2. Mix together all ingredients with 1/2 of the cheese. Shape into loaf in loaf pan or meat loaf pan.

3. Bake for 65-70 minutes.

4. Top with remaining cheese and bake until melted. Servings: 6-8.
