SPINACH PIE 
1 lb. filo leaves, streudel
3 lbs. spinach, fresh or frozen
1 pt. dry cottage cheese
1/2 or 3/4 lb. feta cheese
6 eggs
2 tbsp. mint
1 bunch green onions, chopped
1 stick butter
3 oz. olive oil
3 oz. milk

Wash and drain spinach from the night before, if using fresh. If frozen, thaw and squeeze out liquid. Chop spinach and add crumbled cheese and herbs. Beat eggs and add oil, onions, farina, salt and pepper. Combine with spinach.

Butter pan and layer sheets of filo, buttering in between very lightly. Pour in mixture. Layer 8 sheets on top, sprinkling in between each layer lightly with butter. Bake for 1 hour at 350 degrees.
