CREAMY BROCCOLI SOUP 
2 tbsp. minced onion
3 tbsp. butter
4 1/2 tbsp. flour
1 1/2 tsp. salt
3 c. milk
3 c. chicken broth
10 oz. frozen chopped broccoli
1 c. carrots, finely grated
1 c. water
Grated Cheddar cheese, optional

Saute onion in butter. Add broccoli, carrots, salt and water. Cook until tender 5-10 minutes. Place cooked vegetables in blender and chop coarsely. Make a smooth paste of flour and milk. Add to chopped cooked vegetables. Add chicken broth. Simmer slowly over low heat for 25 minutes. Stir occasionally. Serve hot, topped with grated Cheddar cheese, if desired. Makes 8 servings.
