CREAMY BROCCOLI AU GRATIN SOUP 
2 tbsp. butter
1/2 c. chopped onion
1 3/4 c. water
1 pkg. (4.5 oz.) UNCLE BEN'S® Country Inn broccoli rice au gratin
1/4 c. flour
1/4 tsp. dry mustard
1 3/4 c. chicken broth or bouillon
2 c. milk
1/2 c. shredded American cheese
1 green onion, cut into short, thin strips

Cook onion in butter in large saucepan until tender. Add water and contents of rice and seasoning packets. Bring to a boil. Reduce heat, cover and simmer 20 minutes. Combine flour and dry mustard in a small bowl. Gradually add about 1/2 cup of the broth, stirring until smooth. Stir remaining broth, flour mixture and milk into rice mixture. Heat to a simmer, stirring occasionally. Continue simmering until slightly thickened. Stir in cheese. Sprinkle with green onion.

Can use Rice-a-Roni broccoli au gratin. Cut down on cheese or omit, depends on how cheesy you want it.

Can be done in a crock pot, slow, also.
