BROCCOLI AU GRATIN SOUP 
2 tsp. butter
1/2 c. diced onion
1 1/2 c. chopped broccoli
1/2 c. chicken broth
1 c. low fat (skim) ricotta cheese
1 c. skim milk

Saute onion until translucent. Add chicken broth and broccoli and cook until tender. Remove from heat, add milk and ricotta, and process in blender until smooth. Reheat, but do not boil, and serve with a sprinkling of Parmesan cheese.
