SHRIMP AND OKRA (LENTEN) 
2/3 c. chopped green onions
3 cloves garlic, finely minced
2 c. fresh okra or 1 pkg. frozen okra, thawed
1 lb. shrimp, cleaned
3/4 c. hot water
3/4 c. tomato juice
2 whole bay leaves
1 c. canned tomatoes
1/2 tsp. salt

Saute the onion and garlic in the oil. Add the okra and cook, stirring constantly, for 10 minutes, or until okra appears dry. Add the shrimp and cook for 5 minutes. Add the water, tomato juice, bay leaves, tomatoes, salt, and pepper. Cover and simmer for 20 minutes. Remove bay leaves. Serve over cooked rice. Serves 4.
