OLD FASHIONED OKRA SOUP | |
You can use fresh, frozen or canned ingredients. Fresh is always the best! 1 lb. speckled butter beans 1 lb. chopped okra 1 can corn (not drained) 1 can stewed tomatoes 1 can tomato sauce or 1/2 cup ketchup 1/2 diced onion 2 or 3 diced hot peppers 2 chopped garlic cloves Various on hand meats: Ham bone, chopped up left over ham pieces, chicken, bacon pieces, shrimp, sausage pieces or all (keep the fat on for flavor) 2 or 3 cups chicken stock sprinkle of sugar salt and black pepper Texas Pete hot sauce, to your taste Dump all ingredients in a big pot. I use a dutch oven pot. Bring to a boil and stir. Turn to medium-low and put lid on. Cooking at a slow hot temp for a few hours until all is cooked together and making the house smell good.
