SELF-FILL CREAM CHEESE CUPCAKES 
1 pkg. devil's food cake
Ingredients to make the cake
1 (8 oz.) pkg. softened cream cheese
1 egg
1/3 c. sugar
6 oz. chocolate chips

Make cupcakes as directed on package. Fill cups half full. Mix remaining ingredients. Drop 1 tablespoon in each cupcake. Bake as directed on package. Makes 24 cupcakes.

This is the same recipe my mother started making in 1982! I have been making them for the past several years and have tried every mix available and even homemade chocolate cake. It's not that I'm trying to promote one brand over another, but with my personal experiance I have found that Duncan Hines works the best for the self-fill cupcakes. It seems like it rises up the best locking in the filling. Again, I'm not trying to promote a brand, just sharing what has worked the best for me.

My grandmother gave me this recipe 30 years ago when I was a new mother. It is a kid pleser at parties and much easier than using a frosting bag to fill the cupcakes after baking.

I bet this recipe would be great with two other combinations: Red Velvet cake mix - with white chocolate chips. Carrot Cake mix - with either white chips - or butterscotch.

Great idea with carrot cake. There is on the back of one of the carrot cake mixes a recipe that includes raisins, coconut, pineapple. Those would be great in the cream cheese filling! Mmm mmm!

When I made these, my chips did not melt - what am I doing wrong? They were still good, but it seemed like they should have melted.
