GRANDMA'S ROLLED MOLASSES COOKIES | |
1 cup brown sugar 1 cup lard 3/4 cup dark molasses 1/4 cup Karo dark corn syrup 1 tbsp. baking soda 2 eggs 1 tsp. cinnamon 1/2 tsp. ground cloves 1/2 tsp. salt 1/2 tsp. ginger 3 1/2 to 4 cups flour Lard makes a more elastic dough and better texture, but with some experimentation with flour amount, shortening could be substituted. Preheat oven to 350°F. Heat sugar, lard, molasses, corn syrup in large saucepan. Bring to a rolling boil. Add baking soda. (this may cause mixture to foam, so make sure pan is large enough.) Cool mixture, stirring occasionally. When cool, put in mixing bowl and add eggs. Sift together dry ingredients with only 2 cups of the flour. Add to wet mixture, then add remaining flour. Refrigerate before rolling to make sure it is cool. Roll out dough on floured board and cut into favorite cookie shapes. Bake for 8-12 minutes, depending upon cookie size. When done, remove from sheet and frost with simple powdered sugar frosting while still warm. |
