SCRUMPTIOUS CHOCOLATE CARAMEL
BARS
 
Crust:

1 c. all-purpose flour
1/3 c. sugar
1/2 c. butter, softened

Filling:

1/2 c. sugar
1/4 c. crunchy style peanut butter
1/2 c. light corn syrup
2 eggs
1/4 tsp. salt
1/2 tsp. vanilla
1/2 c. flaked coconut
1/2 c. semi-sweet chocolate chips

Heat oven to 350°F. In small mixer bowl, combine all crust ingredients. Beat at low speed, scraping bowl often, until mixture is crumbly (1 to 2 minutes). Press on bottom of greased 9-inch square baking pan.

Bake for 12 to 17 minutes or until edges are lightly browned.

Meanwhile, in same mixing bowl, combine all filling ingredients except coconut and chocolate chips. Beat at low speed, scraping bowl often, until well mixed (1 to 2 minutes). Stir in coconut and chocolate chips; pour over crust. Return to oven; continue baking for 20 to 30 minutes or until filling is set and golden brown. Cool completely.
