MINT COOKIES 
1 lb. dark chocolate mint candy disks
Ritz crackers

Melt chocolate in bowl in microwave for 1 minute. Stir, then continue cooking for 25 seconds until chocolate is melted. Drop Ritz crackers into chocolate; turn over with fork and place on waxed paper on cookie sheet. Refrigerate.

Since microwave ovens vary in power, you may need to adjust your cooking time.
