RED VELVET CAKE 
2 1/2 c. sifted flour
1 1/2 c. sugar
1 tsp. cocoa
1 c. buttermilk
1 1/2 c. oil
1 tsp. vinegar
2 eggs
1 (1 oz) bottle red food coloring
1 tsp. vanilla

Sift dry ingredients, add other ingredients in order, mix thoroughly.

Bake in layer cake pan (greased and floured).

Bake at 350°F for 25 minutes. Cool.

Cream Cheese Frosting:

1 stick butter (room temperature)
1 (8 oz) pkg. cream cheese (room temperature)
1 box powdered sugar
1/2 tsp. vanilla
1 c. chopped pecans

Cream butter and cream cheese well. Add sugar and continue beating until creamy. Add vanilla and nuts. Spread on cool cake.
