RED VELVET CAKE 
Cake:

2 c. oil
1 tsp. salt
2 1/2 c. sugar
2 eggs
1 c. buttermilk
1 tsp. baking soda
2 1/2 c. and 2 tbsp. flour
2 tbsp. cocoa
1 tsp. vinegar
1 tsp. vanilla
2 oz. red food coloring

Mix oil and eggs. Add eggs and mix well. Mix all dry ingredients together. Add dry ingredients alternating with buttermilk. Add vinegar, vanilla, and food coloring and mix well.

Bake three layers of 8 or 9-inch greased and floured pans.

Bake at 350 until cake springs back when lightly pressed in the center. Cool 15 minutes. Remove and cool on rack.

Frosting:

1 lb. box powdered sugar
8 oz. cream cheese
1 stick butter
1 tsp. vanilla

Mix ingredients well. Spread over cake.
