PARMESAN POTATOES 
1/4 c. all-purpose flour
1/4 c. Parmesan cheese
3/4 tsp. salt
1/8 tsp. pepper
6 lg. potatoes, peeled and cut into eighths
1/3 c. melted butter
2 tbsp. parsley (opt.)

Combine flour, cheese, salt and pepper in a bag. Shake off excess water from potatoes. Shake a few at a time in a bag, coating well. Pour melted butter in a 13 x 9 x 2 inch pan or Pyrex dish. Place potatoes in a single layer. Bake at 375 degrees for 1 hour, turning once. Sprinkle with parsley if desired. 6 to 8 servings.
