YORKSHIRE PUDDING 
2 eggs, well beaten (use 3 if sm.)
1 c. milk, add to eggs
1 c. flour
1 tsp. salt

Add to egg and milk and beat smooth. Pour into hot muffin pans (heat pan about 30 minutes) which has bottoms just covered with hot melted beef fat. Bake in a 375 degree preheated oven for 35 to 40 minutes.

If emergency you may use butter instead of beef fat - NEVER BUTTER. Serve with roast beef dinner.
