BUTTER PECAN ICE CREAM 
2 cups chopped pecans
6 tbsp. butter
6 cups brown sugar
12 eggs
9 cups half & half
3 cups heavy cream
6 tsp. vanilla extract

In a small skillet over medium heat sauté pecans in butter until lightly browned, stirring frequently. Set aside.

In a large saucepan over low heat, stir together brown sugar, eggs and half & half until smooth. Bring to a simmer, stirring occasionally and cook for 2 minutes more. Remove from heat and stir in heavy cream, vanilla and pecans.

Pour into ice cream maker and freeze according to manufacturers directions.

Recipe make 6-quarts of great homemade ice cream.
