MIXED SALAD WITH LEMON MUSTARD
DRESSING
 
1 lg. shallot, minced
2 tbsp. snipped chives
1/2 tsp. salt
2/3 c. olive oil
2 tbsp. lemon juice
1 tbsp. red wine vinegar
2 tsp. Dijon mustard
3 bunches Arugula leaves
1 lg. bunch spinach
1 bunch watercress
1 head Boston lettuce
8 lg. mushrooms, sliced
2 red peppers, sliced
1/2 c. olives, sliced

In jar combine salad dressing ingredients and shake. Refrigerate. Mix salad ingredients in large bowl, and toss with dressing. Serve immediately. Serves 8.
