COD FISH CAKES 
1 lb. boneless cod fish
1 tsp. parsley flakes
1 onion, chopped fine
1 sm. green sweet pepper, chopped fine
1 tsp. hot pepper
1 tbsp. sugar
1 tbsp. baking powder
1/2 lb. flour
1 egg, beaten
Milk
Corn or vegetable oil for frying

Soak cod fish overnight or boil 25 minutes to take out most of the salt. Pour water off, then rinse in cold water. Squeeze water out, then juggle fish by hand removing any hidden bones. Add flour, baking powder, sugar and other ingredients. Pour in milk to form a batter.

Drop by the teaspoonful in hot frying pan with oil. Remove from pan when both sides are golden brown. Serve while hot.
