BANANA-CHIP MUFFINS 
2 1/2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tbsp. instant coffee granules
1 tbsp. hot water
2-3 fully ripe bananas, mashed
1 c. (2 sticks) soft butter
1 1/4 c. sugar
1 egg
1 c. chocolate chips

1. Preheat oven to 400 degrees. Grease muffin tins or use baking cups.

2. Stir together flour, baking powder, baking soda and salt in small bowl.

3. Dissolve instant coffee granules in hot water. Stir into mashed bananas.

4. Beat together butter and sugar in large bowl until light and fluffy. Beat in egg. Mix in banana mixture. Stir in flour mixture until blended. Fold in chocolate chips. Divide batter evenly into muffin cups. (Muffins do not rise very much.)
