BANANA COFFEE CAKE MUFFINS 
2 1/2 c. unsifted flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tbsp. instant coffee granules
1 tbsp. hot water
1 1/3 c. ripe mashed bananas (about 3)
1 c. softened butter
1 1/4 c. sugar
1 egg
1 c. semisweet chocolate chips

Preheat oven to 400 degrees. Grease 2 (12 inch) muffin trays. Stir flour, baking powder, baking soda, and salt. Reserve. Stir ripe bananas, add to it dissolved instant coffee in water. Beat butter and sugar in a large bowl until light and fluffy. Beat in egg. Mix in the bananas. Stir in flour mixture until well blended. Divide equally in muffin tins. Makes 2 dozen.

This is the same as my Nana's recipe. These are simply the best muffins around! To make them a bit healthier, I substitute up to 1/2 cup of either baby food prune puree or applesauce for the butter/margarine (leaving the other 1/2 cup as butter/margarine as written), and up to half of the flour with whole wheat. This doesn't change the taste much but makes them a little less guilt free. Also left off was the baking time: 20 minutes. Try them -- I won't make any other muffins.
