SCALLOPED POTATOES WITH CHEESE 
1 lg. baking potato per person being served
Butter
1/2 lb. grated Cheddar cheese
1 c. minced onion
1/2 c. minced parsley
1 tsp. salt
1 tsp. pepper
1 tsp. paprika

Wash and peel potatoes and slice thin. Put in ice water a little while and drain. Butter bottom and sides of 12 x 8 x 2 inch dish. Layer potatoes, dot with butter and sprinkle generously with cheese, onions, parsley, salt, pepper and paprika. Repeat until you have 4 layers. Pour white sauce over potatoes. Bake in 450 degree oven for 10 minutes - reduce to 350 degrees. Bake for about 2 hours or until potatoes are tender.

WHITE SAUCE:

3 tbsp. butter
3 tbsp. flour
2 c. milk

Melt butter, add flour, gradually add milk - stir until thickened.
