FRESH APPLE BREAD 
1 c. sugar
2 eggs, beaten
2 c. flour
1 tsp. baking soda
1 1/2 tbsp. buttermilk
3 tbsp. sugar
1/2 c. shortening
1 c. grated apple
1/2 tsp. salt
1 c. pecans
1/2 tsp. vanilla
1 tsp. cinnamon

Cream the shortening and 1 cup sugar, then add the eggs and apples. Mix in the dry ingredients and nuts, then stir in the buttermilk and vanilla. Blend well, then pour into greased loaf pan. Sprinkle a topping of 3 tablespoons sugar and 1 teaspoon cinnamon on top. Bake at 350 degrees for 1 hour.
