JINNY'S FRESH APPLE BREAD 
1/4 c. butter
1/2 c. sugar
2 eggs, well beaten
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
2 c. coarsely grated raw apples
2/3 c. chopped pecans
1 tbsp. lemon peel
3 tbsp. sugar
2 tsp. cinnamon

Cream shortening and sugar. Add eggs. Beat well. Combine flour, baking powder, soda and salt. Add alternately with grated apple to egg mixture. Stir in pecans and lemon peel. Batter will be stiff. Place batter in greased and floured 8"x5" loaf pan. Combine sugar and cinnamon and sprinkle over batter. Bake at 350 degrees for 60 to 65 minutes.
