ESCALLOPED POTATOES 
6 med. sized potatoes
4 tbsp. butter
4 tbsp. flour
2 tsp. salt
2 1/2 c. milk
1 1/4 c. grated cheese

Peel potatoes; slice medium thin. Make white sauce of the butter, flour, salt, and milk. When thick, remove from heat and add grated cheese. Stir cheese into sauce. Place sliced potatoes in casserole dish. Cover with hot white sauce. Bake, uncovered, for 1 to 1 1/2 hours at 375 degrees. Serves 6 to 8 people.
