ESCALLOPED SWEET POTATOES &
APPLES
 
2 1/2 lbs. sweet potatoes, cooked & peeled
1 1/2 lbs. apples, canned or fresh (cook until tender)
1 1/2 c. water
3/4 c. brown sugar
3/4 c. white sugar
1 lemon slice
1/2 c. white Karo syrup
2 tbsp. cornstarch
1/4 tsp. salt
1 tbsp. butter
Nutmeg (sm. amt.)

Arrange potatoes and apples in alternate layers. Bring to a boil Karo and water. Mix dry ingredients. Add to boiling syrup. Cool 15 to 20 minutes until clear. Remove from heat. Add lemon and butter. Pour over potatoes. Bake in preheated oven at 350 degrees for 50 to 60 minutes. Serves 10 to 12 servings.
