ESCALLOPED SWEET POTATOES &
APPLES
 
4 med. sweet potatoes or yams
3 tart apples
3/4 tsp. salt
1/2 c. brown sugar, firmly packed
3 tbsp. butter

Scrub potatoes, peel thinly and cut into 1/4 inch slices. Core and cut apples of the same thickness. Arrange in alternate layers in buttered casserole. Sprinkling each layer of potatoes with salt and each layer of apples with sugar. Dot with butter; cover casserole and bake in moderate oven (375 degrees) until both potatoes and apples are very tender and flavors are well blended, about 45 minutes. Makes 5 servings.

Note: Redskin apples add attractive color and sprinkled with lemon juice.
