STUFFED MANICOTTI 
Cook manicotti shells according to directions on package. Brown 3/4 pound Italian (or any kind) sausage. Drain and add 1 small can tomato sauce, 1 small can tomato paste and 1 large can whole tomatoes, drained.

In small pan, saute 1/4 cup chopped onion and 1/2 cup chopped mushrooms. Add to sausage mixture.

In separate bowl, mix together 1 beaten egg, 1 1/2 cups cottage cheese, 1 cup Mozzarella cheese and seasonings; fresh garlic, basil, thyme, oregano, parsley, pepper to taste. Then add 1 package of frozen chopped spinach that has been thawed and water removed. Add everything together and stuff into cooked shells. Top shells with any remaining mixture. Bake in a covered dish for about 30 minutes.
