MICROWAVED BEEF-STUFFED
MANICOTTI
 
1/2 lb. ground beef
1 c. dry cottage cheese
3/4 c. Parmesan cheese
1 clove garlic, crushed
3 tbsp. chopped onion
1 tsp. sweet basil
1 tsp. oregano
1 tsp. Italian seasoning
Salt & pepper
3 c. seasoned tomato sauce
13 UNCOOKED manicotti
1/2 c. Mozzarella cheese (opt.)

Combine all ingredients except tomato sauce, manicotti shells and optional cheese. Stuff manicotti shells with this mixture, packing tightly. Place shells in 1 layer in a large square pan, microwave safe and cover with tomato sauce.

Microwave, covered with plastic wrap, on high for 10 minutes. Then on medium for 24 to 26 minutes. Sprinkle with optional cheese, if desired, and let stand UNCOVERED for 10 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
