FRUITED CHEESE LOG | |
1/2 c. dried apricots 1 lb. cheddar cheese, shredded 1 (8 oz.) pkg. cream cheese 1/3 c. dry sherry 1 tsp. poppy seeds 1/2 tsp. seasoned salt 1/3 c. raisins (Sultana) 1/3 c. chopped dates 1 c. chopped walnuts 2 tbsp. chopped red candied cherries (opt.) Soak apricots in 1 cup water for 2 hours, then drain and chop. Beat cheeses together and add sherry, poppy seeds and salt. Beat again. Add apricots, raisins, dates and mix thoroughly. Dump onto wax paper and shape into one or two logs. Wrap well in plastic wrap and chill until firm. Mix nuts and cherries together and roll log in mixture to coat - don't forget ends. Wrap again and chill until ready to use. Makes (2) 1 pound logs of (1) 2 pound log. Can be frozen. |
