OATMEAL COOKIES (3) 
1 1/2 c. sifted flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
2 c. brown sugar
1 c. shortening
2 eggs, beaten
1 tsp. vanilla
3 c. quick cooking rolled oats

Sift flour, salt, baking powder & soda. Cream brown sugar and shortening. Add eggs and vanilla. Beat well. Stir in dry ingredients and rolled oats. Chill dough. Form into balls and roll into powdered sugar until heavily coated.

Bake in a moderate oven on greased cookie sheet at 375°F for 8-10 minutes.
