1 onion
3 med. potatoes, mashed with milk and butter
Salt and pepper to taste
2 eggs
1/4 c. grated cheese

Cook onion until softened. Add onion to mashed potatoes. Divide into 2 "nests". Crack egg into each nest. Sprinkle with cheese. Bake at 400 degrees F. 20-25 minutes. Garnish with parsley. Serve with beans or broiled tomatoes or salad. Serves 2.
