BEET PICKLES 
2 c. sugar
2 c. water
2 c. vinegar
1 tsp. cloves
1 tsp. allspice
1 tsp. cinnamon
1 thinly sliced lemon; optional

Cook small young beets. Cool and peel. Mix all ingredients except beets, and bring to boil. Add beets and bring back to boil. Simmer for 15 minutes. Pack in sterilized jars and seal.

NOTE: Instead of using listed spices 1 to 1 1/2 tablespoons pickling spices in cloth bag may be used. Makes 3-4 quarts.
