REFRIGERATOR BEET PICKLES 
1 (16 oz.) can sliced beets, drained

BRINE:

1/2 c. water
1/2 c. white vinegar
1/2 c. sugar
Salt
1/4 tsp. cinnamon
2 whole cloves

Bring to boil. Pour over drained beets until covered. Refrigerate 24 hours. Ready to eat.

Did these.. using fresh cooked beets. Very good... added a pepperoncini pepper in each jar and juice from the jar of peppers. Gives a little zing. Definitely will do these again, thanks!
