BASIC CHEESECAKE 
2 lbs. cream cheese
1 tbsp. vanilla
1/2 c. sugar
3 eggs
1 c. whipping cream

GRAHAM CRACKER CRUST:

1 3/4 c. cracker crumbs
1/3 c. butter
1/4 c. sugar

Make crust: Melt butter; mix in graham cracker crumbs and sugar. Pat on bottom and up sides of a 9 inch spring-form pan.

Make Filling: Beat cream cheese at medium speed until light and fluffy. Add sugar and vanilla; beat well. Add eggs, one at a time, beating well after each addition. Add whipping cream. Beat until blended well. Pour filling into spring-form pan. Bake for 1 hour at 350 degrees.

Variations on a cheesecake:

Add any one or more of the following: 1/4 cup of favorite liqueur - Amaretto is particularly good; 1/2 cup of miniature chocolate chips.
