GERMAN APPLE PANCAKE 
#1:

2/3 c. sifted all-purpose flour
1/2 tsp. sugar
Pinch of salt
1/2 tsp. baking powder

#2:

4 eggs, slightly beaten
2/3 c. milk

Beat eggs and milk together and add to flour mixture leaving batter a bit lumpy.

#3:

Bake in extra large iron skillet or in 2 smaller medium skillets. Butter skillets about 2 tablespoons for large skillet and less for each of the 2 skillets. Heat butter until good and hot. Bake in preheated 425 degree oven for 18-20 minutes. I make 1 huge pancake in extra large iron skillet, the pancake will be like a bowl and uneven.

FILLING:

Prepare anytime before or day before.

4 lg. apples, about

Peel, core and slice apples in 4 parts and each part across in slices. Make a syrup with water about 3/4 inches of pot. Add 1/4 cup of sugar, 1 lemon slice and 1 orange slice. Simmer slightly. Add apple slices and simmer, stirring every so often with spoon until soft. Add room temperature to pancake, fold up. Also add syrup - maple, our favorite.
