CHRISTMAS MORNING CORNBREAD 
1 1/2 c. unbleached flour
1/2 c. whole wheat flour
1/4 c. honey (can be omitted)
3/4 c. cornmeal
3/4 c. oatmeal
1/2 tsp. salt
1 1/4 tsp. baking soda
1 c. wheat germ
1/2 tsp. toasted sesame seeds
2 c. buttermilk
1/2 c. corn or safflower oil
3 egg whites & 1 yolk
1/2 c. walnuts pieces, optional

Preheat oven to 375 degrees. Grease one 9 x 5 inch loaf pan. Mix all dry ingredients in large bowl. Mix all wet ingredients into second bowl. Stir wet into dry until just mixed. Pour into loaf pan. Bake 55 minutes until wooden skewer comes out clean.

This makes 1 large dense, moist loaf, good enough to skip the butter. But don't skip the honey on your slice!
