FESTIVE PUMPKIN BREAD | |
1/2 c. salad oil 2 eggs 1/3 c. water 1 1/4 c. sugar 1 c. mashed cooked pumpkin 1 2/3 c. self-rising flour 1/2 tsp. nutmeg 1/2 tsp. cinnamon 1/2 c. chopped pecans 1/2 c. chopped candied cherries Combine oil, eggs, water and pumpkin in a mixing bowl; set aside. Combine flour, sugar, nutmeg and cinnamon. Add to pumpkin mixture, beating until smooth. Fold in cherries and pecans. Spoon into a greased and floured loaf pan. Bake at 350 degrees for 1 hour or until done. This is better the second or third day. |
