SHRIMP CASSEROLE 
2 lbs. med. shrimp, boiled and peeled
1 (12 oz.) pkg. vermicelli
1 (16 oz.) carton of sour cream
1 (10 3/4 oz.) can cream of mushroom soup
1/2 c. white onions, sauteed
4 hard boiled eggs
Grated cheddar cheese

Combine sour cream, can of mushroom soup, sauteed onions and boiled eggs in bowl. Cook and drain vermicelli. Layer pasta, shrimp and sauce in casserole dish. Bake 15 to 20 minutes at 350 degrees. Top with grated cheddar cheese and return to oven to melt cheese. Serve hot. Serves 8.
