SHRIMP CASSEROLE | |
2-3 lb. shrimp, peeled, cooked, chopped, and lightly seasoned 1 pkg. vermicelli, cooked and drained 1 lb. Velveeta cheese 1 pt. half & half milk 1 1/2 sticks butter 1 c. chopped seasoning mixture (onions, shallots, parsley, celery) Grated Parmesan cheese Melt Velveeta and butter in large bowl in microwave (or double boiler on range). Add seasoning mixture and chopped shrimp. Then heat together for about 3 minutes in microwave. Place cooked vermicelli in large baking dish, add liquid mixture, and toss to blend together. Add salt and pepper or Cajun seasoning to taste, sprinkle top with Parmesan cheese, and bake covered at 350 degrees for 30 minutes, then uncovered for 10-15 minutes until most of the liquid has been absorbed. |
