FRUIT JEWEL COOKIES 
1 c. flour
1/2 c. butter (creamed)
1/2 c. confectioners sugar
1 egg (separated)
1/4 c. pineapple preserves
1 tsp. orange rind
1 tsp. vanilla
1/4 tsp. salt
1 c. chopped pecans
candied cherries (cut in half)

Cream butter and sugar until light and fluffy. Beat in egg yolk, preserves, rind and vanilla. Stir in flour and salt. Chill dough 2 hours. Roll dough into balls. Dip in egg white and roll in nuts. Place on ungreased cookie sheet and bake at 350 degrees for 12 to 15 minutes. Press half of cherry on top while still hot.
