4 servings 1 1/2 lbs. ground beef chuck 1 beaten egg Salt and pepper 8 lg. stuffed Spanish olives 8 cherry tomatoes 8 parboiled sm. white onions 1 c. ketchup 1 tbsp. grated horseradish 1/2 tsp. Worcestershire sauce 1/2 tsp. prepared mustard 1/2 tsp. onion juice Mix meat with egg and season with salt and pepper. Shape mixture in 24 small meatballs. Thread each of four 16 inch skewers with olives, tomatoes, onions, and meatballs, dividing these ingredients equally among the skewers. Mix all remaing ingredients together. Brush meat an vegetables liberally with sauce. Broil 2 inches from heat, rotating skewers and brushing with sauce several times until meat is cooked to desired degree of doneness. Remove from skewers to serve. |
