1 1/2 c. sugar
1 c. vegetable oil
3 eggs
2 c. flour
1 1/2 tsp. ground cinnamon
1 tsp. baking soda
1 tsp. vanilla
1/2 tsp. salt
1/4 tsp. nutmeg
3 c. apples, grated (about 4)
Powdered sugar

Heat oven to 350 degrees. Grease and flour 13 x 9 x 2 inch pan. Mix sugar, oil and eggs. Stir in remaining ingredients except apples and mix well. Add apples. Bake 35 to 45 minutes until toothpick comes out clean from center. Let cool slightly and sprinkle top with powdered sugar.
