CAJUN CORNBREAD 
1 lb. ground meat
Salt & pepper
1 chopped onion
10 oz. cheddar cheese, grated
1 can cream style corn
2 eggs
3/4 tsp. baking soda
4 jalapenos, chopped
1 c. cornmeal
1 c. buttermilk
1 tsp. salt

Brown ground meat. Add salt and pepper to taste. Add chopped onion. Mix together cream style corn, eggs, baking soda, jalapenos, cornmeal, buttermilk and salt. Pour half of the cornbread mixture into an 8" iron skillet. Add meat mixture. Sprinkle with cheese. Top with remaining half of the cornbread mixture. Bake for 55 minutes at 350 degrees.
