CAJUN CAKE 
2 c. flour
1 1/2 c. sugar
1 1/2 tsp. baking soda
Dash of salt
2 eggs, beaten
1 tsp. vanilla
1 (No. 2) can crushed pineapple, do not drain juice

Mix all ingredients together. Bake in greased and floured 9 x 13 inch pan. Bake 35 minutes at 350 degrees.

TOPPING FOR CAJUN CAKE:

1/2 c. evaporated milk
3/4 c. sugar
1/4 lb. butter

Bring ingredients to a boil. Cook for one minute. Add 1 cup coconut, 1 cup chopped nutmeats, and 1 teaspoon vanilla. Pour over hot cake as soon as it is removed from oven.
