CAJUN SHEATH CAKE 
2 c. sifted flour
2 c. sugar
2 sticks butter
4 tbsp. cocoa
2 eggs
1 c. water
1/2 c. buttermilk
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla

Sift flour and sugar in a bowl together. Then place butter, cocoa, and water in a boiler and bring to a boil. Pour mixture over flour and sugar; mix well. Add buttermilk, soda, cinnamon, eggs (slightly beaten), and vanilla. Grease 12 x 8 1/2 inch flat pan. Pour in batter. Bake at 350 degrees for 30 minutes or until done. Start icing about 5 minutes before cake is done.

ICING:

1 stick butter
1/2 c. milk
4 tbsp. cocoa
1 box confectioners' sugar
1 tsp. vanilla
1 c. chopped pecans

Melt butter. Add milk and cocoa. Add confectioners' sugar, vanilla, and pecans. Pour over hot cake when it comes from the oven. Cool at least 12 hours before cutting.
