CROCK POT ROAST 
roast beef cut of choice
one carafe of strong coffee
carrots
onions
garlic
mushroom of choice
potatoes
parsnips (or any vegetable desired)

Sear meat on stove with a little oil and butter. Remove meat when browned. Brown onions, garlic and mushrooms in meat drippings. I prefer portobello mushrooms but you can substitute with other kinds. Put all ingredients in crock-pot with coffee and simmer until tender.

This is the best pot roast and gravy you will ever have!

I wanted to try this but was not sure so I used only 1 cup coffee and 3 cups beef broth. I have to say it was very good! thanks for the idea. I used real brewed coffee, don't think it would work with instant coffee because of the awful chemical additives.

Just started this recipe added a little variation along with the coffee I added french dip concentrate to this with a little liquid smoke and gotta say its smelling delicious - can't wait to try it!

Good recipe. I eat paleo so I removed the potatoes and added butternut squash and zuccini as well as 4 crushed cloves of garlic (during the searing phase which I used bacon grease for instead of butter). Awesome!

Oh my...love coffee so I thought this should be good and then from the other reviews figured it had to be. I have waited all day and it smelled absolutely wonderful however, the vegetables are a total loss as they taste terrible of strong coffee and the meat is the driest pot roast I have ever cooked. Would not recommend cooking anything with coffee ever again nor will I try any recipes that call for coffee! My family even said it was horrible.

I love coffee and I must say I was a little hesitant about trying this after reading Karen's disastrous review. I'm glad I didn't listen to her. I made this yesterday, and although I was never much of a pot roast fan, it is without a doubt the best pot roast I've ever had. My husband is still raving how good it is. He said he's never had pot roast as good. The meat came out so juicy, tender and flavorful. This recipe is a definite keeper. Thanks so much!!

After reading the reviews I thought I had hit the jackpot. Not so much! The pot roast was okay -- nothing special. Kind of bitter, needed salt, needed hot sauce just to bring the flavor into something more acceptable. Skip this one!!!

Laurie, there are NO ADDED ingredients in instant coffee. It is the same as regular coffee. Coffee beans water, then dried. It just taste different due to the process.

I used a 2-1/2 pound rump roast, which needed about 10 hours in the crock pot at low temp; then added lots of salt and, in the overall scheme of things, will probably keep looking for a better crock pot roast recipe . . .

Love this recipe, I have used it several times. Never dry, very moist and tender. I add lots more veggies to mine and use 2 cups brewed coffee and 3 cups beef broth. I brown my roast and then cook in crock-pot high for 2 hours then low for 3 hours to speed it up, works every time. The reviews that say this is terrible and dry obviously can't follow directions.

Been cooking with coffee for years. But if you only put in one cup of coffee its much better results. If you put in a pot of coffee you are boiling your roast, not slow cooking it, might be the reason some has had it turn out dry.
